The supercritical carbon dioxide process uses carbon dioxide under high pressure and temperature to remove caffeine from the beans. It might sound technical and seven days in liquid CO₂ sounds extreme, but it’s one of the cleaner and more efficient ways of producing decaf and is used more widely than you might expect. | James Hoffmann
